We are past the 11 stage so are interested in GCSE, I am intrigued as well whether there is anything in between those stages to share that would be useful - not necessarily exam related, but something to judge KS3 skills by and whether our kids are at the level they need to be at that stage too. Schools often administer assessments like this with the questions narrower in scope than standard GCSE questions at KS3.
In general, I would recommend using KS3 to really drill down on specific skills such as writing thesis statements, essay planning and close reading.
